Squash is undoubtedly one of the highlights of my fall produce haul. Butternut, acorn, spaghetti - I love em’ all! Acorn squash is one of my favorites because it bakes down to be so incredibly buttery and tender. This blossoming squash skillet packs all the savory notes I love about the season.

Another perk of this meal is the simple cast iron prep. Cast iron cooking is easy and full of flavor. Whether you want to cook the squash on a sheet before or do all the prep in your skillet, this bake is rich in an abundance of fall flavor.
Directions
1. Slice squash thin and arrange on a baking sheet treated with olive oil.
2. Brush squash with olive oil and season with Everything Bagel seasoning.
3. Bake on sheet for 25 minutes. (400 degrees)
4. Gently remove cooked squash and arrange in a circle on cast iron pan.
5. Crack eggs into holes.
6. Sprinkle with cheese and drizzle with hot sauce.
7. Bake cast iron skillet for 15 minutes. (400 degrees)
8. Top off with fresh herbs for garnish.
