When it comes to dessert, I love the combination of fresh ingredients with ones that are a little more indulgent. I’m also a little obsessed with Trader Joe's Cookie Butter (who isn’t?), so I have been dying to find a way to make it into a whole treat! This Cookie Butter stuffed dates recipe combines sweet and chewy dates with the gooey, savory goodness of cookie butter. A little flair of chocolate, nuts or seeds on top adds an extra pop of flavor or a little crunch to this simple, 10-minute treat.
This recipe is not only easy to prepare, but you only need 3 ingredients. Desserts can sometimes have an elaborate list of ingredients, but this recipe allows for a little improvising to keep this sweet snack fun and new each time you make it.

Directions
1. Slice top half of dried date lengthwise. Open date for stuffing and lay on a baking sheet with parchment paper.
2. In a small (microwavable) bowl, scoop out approx ½ jar of cookie butter.
3. Heat cookie butter in microwave for 30 seconds- on high. (This will make it easier to drizzle into the dates)
4. With a tablespoon, drizzle warm cookie butter into opened dates until full.
5. Sprinkle chocolate chunks or chips over dates.
6. Add any additional toppings.
7. Freeze for 10-20 minutes. (This will make them firmer and easier to eat)
